I also wanted to share an amazing "clean" meal we had for dinner last night. I was skeptical about the fruit mixed with the carb but it was awesome!
Jerk Chicken with Caribbean Brown Rice

Ingredients:
- boneless, skinless chicken breasts thawed: we used 3 because that is what we had
- 1 tablespoon paprika
- 3 tablespoons minced garlic
- 1 teaspoon curry powder
- 1/4 teaspoon cayenne pepper
- 1/4 dried thyme
- 1/4 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup uncooked brown rice
- 1/2 cup each diced strawberries, mango, and pineapple
- 3 tablespoons juice from a fresh orange
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon lime juice
- 1 teaspoon maple syrup
Directions:
- Create a rub for the chicken by mixing all the spices, salt and pepper with the olive oil.
- Rub chicken with spice mixture and let sit for 30 minutes.
- While waiting on the chicken begin cooking your rice per the package instructions.
- When rice is done cooking and is at the "resting" stage stir in the strawberries, mango, and pineapple along with 1 tablespoon olive oil, lime juice, and maple syrup.
- Cook your chicken however you prefer. We planned to grill but it started storming right before dinner so we baked the chicken in the oven and browned them a bit at the end using the broiler. If your broiler is anything like ours it is a sneaky little thing and can burn stuff in the blink of an eye, so if you choose this method watch closely! You could also choose to cook them on the stove top... so many options!
- Now the best part! Top the rice mixture with your chicken (I cubed my chicken and kind of mixed it all together)... and enjoy!!!
I think this would be amazing with cous cous but pasta is still not really husband approved. Hopefully after his triathlon we can start eating pasta again!!!!!
