With this recipe now you can recreate summer no matter what mother nature throws at you!
Tastes Like Summer Salad
Dressing Ingredients:
2 tbs. Olive Oil
1 tbs. Lemon Juice
1 clove minced garlic
1/2 tsp. Dijon Mustard
1/8 tsp. Worcestershire
1/4 tsp. Pepper
2 tbs. Parmesan Cheese
Super Simple Directions:
1. Whisk together all the ingredients for the dressing
2. Slice heads of romaine in half
3. Rinse and dry romaine
4. Remove wilted outer leaves
5. Mist all sides of romaine with olive oil (if you don't have a mister you can drizzle it on)
6. Grill romaine for around 6 minutes or until slightly charred (see above image)
7. Pour dressing on top and enjoy!
Tips and Tricks:
It is best to eat this pretty quick after pulling it off the grill!
I can definitely tell the difference when I am too lazy to dry the romaine off after rinsing.
I usually double the ingredient amounts above so I have leftover dressing to use on my regular salads throughout the week.
If it is too cold to grill or you want a quick and easy inside version chop the romaine (or I prefer using Kale) and saute in a pan with the dressing quickly on a high temp.
I was considering what this would taste like with honey mustard, I think I will try that next time!
