Tastes Like Summer Salad

When you think summer what comes to mind? For me summer and grilling go hand in hand. The first time we grill each year brings about thoughts of warm weather. This year we have had a strange spring that has been a little to stuck on winter weather. We haven't had as many opportunities to grill as we normally would by this time of he year but when the weather has cooperated you can be sure to find the husband outside making something delicious! One of my favorite unique grilled dishes is the Tastes Like Summer Salad it can even make a chilly night like tonight feel a little warmer. The dressing is amazing and can be used for more than just salad. Tonight we used it as a sauce for the chicken too!

With this recipe now you can recreate summer no matter what mother nature throws at you!

Tastes Like Summer Salad
Dressing Ingredients:
2 tbs. Olive Oil
1 tbs. Lemon Juice
1 clove minced garlic
1/2 tsp. Dijon Mustard
1/8 tsp. Worcestershire
1/4 tsp. Pepper
2 tbs. Parmesan Cheese

Super Simple Directions:
1. Whisk together all the ingredients for the dressing
2. Slice heads of romaine in half
3. Rinse and dry romaine
4. Remove wilted outer leaves
5. Mist all sides of romaine with olive oil (if you don't have a mister you can drizzle it on)

6. Grill romaine for around 6 minutes or until slightly charred (see above image)
7. Pour dressing on top and enjoy!

Tips and Tricks:
It is best to eat this pretty quick after pulling it off the grill!
I can definitely tell the difference when I am too lazy to dry the romaine off after rinsing.
I usually double the ingredient amounts above so I have leftover dressing to use on my regular salads throughout the week.
If it is too cold to grill or you want a quick and easy inside version chop the romaine (or I prefer using Kale) and saute in a pan with the dressing quickly on a high temp.
I was considering what this would taste like with honey mustard, I think I will try that next time!
